View of Mexico......Part 1
This last week we were treated to another part of Mexican culture and food, Chicken Foot Soup. At first we thought it was chicken leg but a quick look changed our minds. We have to say that the soup itself was absolutely amazing and really tasty with some vegetables and broth. However, we didn't brave it as many of the others did, and ate the chicken foot. Maybe next time!

As former OMSers on the Mozambique field, my wife and I had the pleasure of eating chicken foot soup in Africa. The trick is to eat it a little bit at a time! Cut off up to the first knuckle with a bite of soup. Lather, rinse, repeat. If you save it till the end and try to eat it all at once, it's too rich; it's mostly fat. The foot is actually what adds a lot of the flavor to the soup that you liked so much, so you don't need to be scared of it. As they say in Mozambique, "Bom Gosto!"
